Ingredients:
1 3/4 C unbleached all-purpose flour
(scoop measuring cup into flour, level off with a knife)
4 tbsp water
1/2 C unsalted butter
(it makes a big difference in the flavor)
1 egg yolk
2 1/2 tbsp powdered sugar
1 tsp baking powder
Dash of salt
1 egg white, lightly beaten for glaze
Sesame seeds
Preheat the oven to 375º. Place the flour in a mixing bowl. Make a hollow in the middle. Place 4 tbsp water, butter, egg yolk, powdered sugar, baking powder and salt in the hollow and mix with your fingertips. When its mixed, start mixing it into the flour until you have a cohesive dough. Knead until smooth.
Divide the dough into 20 equal portions. Roll each piece between your palms into a 5' long roll. Join the ends of these rolls to form circles. Dip the circles first into the lightly beaten egg white then into a bowl of sesame seeds. Place them on a baking sheet and bake 20 minutes or until golden brown.
